Apio’s new Eat Smart ginger bok choy vegetable salad

Responding to strong consumer demand for vegetable salads that taste great and are packed with nutrient-dense superfoods, Apio Inc., a wholly owned subsidiary of Landec Corp. and a leading national producer of fresh-cut vegetable products, is introducing its new Eat Smart ginger bok choy vegetable salad kit.12oz-Ginger-Bok-Choy

The salad contains six vegetables recognized for their nutritional value: sugar snap peas, carrots, Napa cabbage, broccoli, bok choy and red cabbage.

The Apio culinary team paired these superfoods with roasted peanuts, included in a separate pack to add crunch and additional flavor, and a ginger dressing that brings out the refreshing taste of the vegetables.

"More than ever, consumers have healthy eating on their minds, and the ginger bok choy vegetable salad is full of fresh, pre-cut and pre-washed vegetables that provide a delicious way to eat their superfoods," Cali Tanguay, Apio's director of marketing and technology, said in a press release. "This new product joins Apio's popular sweet kale vegetable salad kit, which contains seven superfoods and is part of our restaurant-inspired Gourmet Selections line."

Superfoods are nutrient-rich foods that typically contain phytochemicals, which are believed to promote health. Glucosinolates, found in cruciferous vegetables such as broccoli, bok choy, kale, Napa cabbage and red cabbage — the primary ingredients in the ginger bok choy and sweet kale salads — are phytochemicals that can stimulate the body's own natural antioxidant systems.

"In addition to its nutrient-dense appeal and richness of flavor, the ginger bok choy salad kit offers the convenience and value that today's busy consumers require. Everything they need to prepare and serve a gourmet salad is right in the package," said Ms. Tanguay. "We're excited to introduce this new salad to our customers. It's light, refreshing, and ideal for summer, so the timing is just right."

The ginger bok choy vegetable salad is available in 12-ounce bags nationwide.
