U.S. potato retail sector shows growth
Among negative economic headlines, there is good news for grocery retailers. Data from January through March of this year shows a 2.3 percent volume increase in the U.S. potato retail sector, with 81 percent of Americans reporting they eat at least one serving of potatoes a week. The study also cited potatoes taking the top spot as America’s favorite vegetable for nine consecutive years.
“People love potatoes especially around the holidays, and are finding new ways to enjoy them,” said Kathleen Triou, president and CEO of Fresh Solutions Network. “Creative consumers and trendsetters are turning leftover Thanksgiving mashed potatoes into donuts, sweet potatoes into rolls or starting the day with a warm potato breakfast bowl.”
After the recent Trick-or-Tater Halloween Potato Trend made national news, fall continues to inspire new or new-again twists on potatoes, such as Spudnuts – a type of doughnut made with mashed potatoes or potato flour, making them softer and lighter than a traditional doughnut.
Food creator @by.floooo suggests using mashed potatoes to make comforting “crispy on the outside, soft and fluffy on the inside” donuts. Other leading food writers and bloggers post potato possibilities for any time of day, from Fried Potato Breakfast Bowls to Make These Sausage and Egg Make Ahead Breakfast Bowls.
