Savor the season with a fresh melon pavlova
When looking for desserts, experimenting with color is the best way to explore options! Fruit is a great way to incorporate a color of the rainbow as well as add sweetness to a post-meal treat! Colorful desserts will not only appeal to the eye but also provide diverse flavors and textures when incorporating natural sweetness.
So next time you’re craving a sweet treat or need something to bring to a family gathering, try this Melon Pavlova! I love it because it uses always-available greenhouse grown melons, so it’s perfect for any time of the year and adds a pop of freshness mid-winter! This unique twist on the beloved dish pairs fresh melon marinated in mint and lime on a bed of whipped cream and served on a delicately crisp meringue.
OPTIMIZE NATURAL SWEETNESS –
Opting for fruit rather than a different sweetener is also going to be more beneficial for you. Your body will thank you for giving it the nutrients it needs. Pure Flavor Oronai Sweet Charentais melons are low in calories and rich in essential vitamins and minerals, making them a guilt-free treat. They will not only satisfy your sweet tooth but also provide a burst of antioxidants! This makes them a delicious and wholesome choice when seeking both indulgence and health benefits.
Pavlova is one of my family’s all-time favorite desserts! This beautiful and delicious dessert is surprisingly easy enough to make for Sunday dinner or is sure to be a real showstopper at any gathering.
These greenhouse grown melons have a sweet and aromatic flavor. What makes them unique is that they are available all year long thanks to the controlled conditions of the greenhouses in which they grow. This means the end result is more fruits and vegetables with less impact on the environment, which sure makes me happy!
Oronai’s floral fragrance and vibrant colors will mesmerize your senses while their lingering juicy flavors will remind you of sunny summer days with every bite. Escaping the cold one slice at a time!
The sweet melon is briefly marinated in lime juice and mint and then served with vanilla bean whipped cream atop a meringue base. Garnish with glistening pomegranate seeds and fresh mint for a sweet and fruity dessert your friends and family will love.

Step by Step Instructions
This recipe may look impressive, but it is surprisingly easy to make!
When making meringue the key is to add the sugar slowly. Whip the eggs to soft peaks, then add sugar about one tablespoon at a time until stiff peaks form. You should be able to tip the bowl upside down without any meringue falling out.
Then mix the vinegar and cornstarch together and fold into the mixture.
Spread the meringue onto a parchment lined baking sheet in a circle shape, forming a well in the middle (where you will later add the whipped cream). Then bake in the oven.
When the meringue is fully baked turn the oven heat off. Then open the oven door slightly and allow it cool in the oven for at least an hour and half up to over night before topping.
When the meringue has cooled make your whipped cream, remove the seeds from a pomegranate and in a separate bowl mix melon with lime juice and fresh mint.
Spoon the whipped cream into the well of the meringue. Then top with melon, pomegranate seeds and fresh mint leaves. Serve immediately and enjoy!
