Roasted Beet Dip recipe from Consalo Family Farms

Roasted Beet Dip
2 Medium Consalo Family Farms roasted beets
1 Clove of garlic
2 Tablespoons tahini
1/2 Consalo Family Farms lemon, juiced
1/4 Tsp ground cumin
Kosher salt to taste
Salt and freshly ground pepper to taste
Preheat oven to 400 F.
Pour the kosher salt at least 1/2 inch up the sides of a small baking tray
Wrap the beets in foil with a drizzle of olive oil, pinch of salt and pepper, then place on the baking tray.
Roast for about 40 minutes or until the beets are tender to easily poke with a fork.
Add all the ingredients to the blender and blend until smooth.
Adjust seasoning and serve topped with diced roasted beets, greek yogurt and a drizzle of extra virgin olive oil.
