The perfect family breakfast skillet

Elizabeth Jordan-Flight is on the hunt for delicious, quick and wholesome meal ideas that her family will love. This Pepper Sausage Skillet is one of her family’s favorites! Not only does it cut down on dishes because it can all be made in one skillet, but it’s perfect for warming up on cool winter morning with a fried egg over top or enjoyed on its own for a weeknight dinner.

breakfastIn her house they take mealtime very seriously as it is proven that family meals can improve your health. It’s not only the quality time, but studies show that family meals can help with the development of children, form healthy eating habits for all and lower anxiety and depression.

Especially during the busy week, and taking her children to extracurricular activities, she has less time to make breakfasts for family. Bonus if there are leftovers which she can use for weekday meals!

By now I’m sure y’all know Jordan-Flights am a big fan of Pure Flavor produce and these sweet and crisp Aurora Bites Mini Sweet Peppers are the perfect addition to this recipe. Her son eats these peppers like apples. They’re great served with hummus or your favorite dips and they really make this skillet something special!

In addition to tasting great, Pure Flavor is committed to ensuring the highest quality greenhouse grown produce that is available all year-round so you never have to sacrifice fresh ingredients in your recipes mid-winter! Let’s run through the simple steps to creating this recipe for your family.

breakfastWHAT YOU’LL NEED –

Equipment:

  • Cutting board
  • Chef’s knife
  • Large skillet, preferably cast iron

Ingredients:

  • Sweet peppers: The sweeter the better when it comes to this dish! I highly recommend using Pure Flavor Aurora Bites Sweet Mini Peppers.
  • Baby potatoes: Jordan-Flights recommend using a small waxy potato such as Yukon potatoes. If they are small you can cut them into quarters.
  • Onion: A white or yellow onion works great.
  • Garlic: Fresh garlic is always best!
  • Smoked sausage: While you can use your favorite brand, Jordan-Flights recommend polka kielbasa-style sausage.
  • Chicken broth
  • Olive oil
  • Italian seasoning, garlic powder, onion powder, paprika, salt and pepper
  • Fresh parsley

Directions:breakfast

First, you are going to want to heat the olive oil in a cast iron skillet over medium-high heat. Add your potatoes and season with salt & pepper. Cook for 12 minutes until tender and golden. Then, remove the potatoes to a plate and set aside.

Next, add the kielbasa to the pan and cook over medium until browned, about five minutes. Add in onions, peppers, garlic and seasonings. Cook for five more minutes then, deglaze the pan with chicken broth. Cook until vegetables are tender and broth is reduced.

Add the potatoes back into the pan and stir together to combine. Season with salt and pepper to taste.

Garnish with fresh parsley to serve and enjoy!

GET CREATIVE WITH YOUR INGREDIENTS –

Using just one pan and a few simple ingredients, this recipe is easy to customize and can be doubled or even tripled for a crowd! You can experiment with different ingredients depending on your families’ preferences.

breakfastNo matter what you are looking for in a breakfast, this dish is able to meet all of your needs. It is naturally gluten-free and if you use sugar-free sausage works great for a Whole30 or paleo diet. You can add sliced toast for that extra boost of carbohydrates change up the meat selection based on your preferred protein, or top it off with cheddar to make it super cheesy.

The vegetable combinations could also be endless! What makes this fun, is that you’re able to customize this recipe as desired. Swap the peppers for some Sangria Medley Tomatoes to add that same color to the dish. Or dice up some Organic Tomatoes On-The-Vine for that extra bit of nutrients and additional flavor.

Another flavor profile which could be interesting is fruity! Try pairing the skillet with these Cloud 9 Bite-Sized Fruity Tomatoes. The added sweetness would elevate the dish to another level, which Jordan-Flights will definitely be trying next chance she get! They’re tasty enough to eat on their own, so snacking on them while cooking is another plus!

Since this recipe utilizes sweet peppers, there isn’t much spice to this dish. It’s great for picky children who will only eat certain meals. To be able to have the saltiness of the potatoes, sweetness of the peppers and heartiness in the sausage, it is a meal great for all. However, if you’d like to take the heat up a notch you can throw in a diced Craft House Collection Shishito Pepper or some red pepper flakes.

Experiment with this recipe or try it out as is! It’ll be sure to taste great and get your family excited for more meals together!
