Start by preheating your oven to 400°F. Slice one pint of Sangria® Medley Tomatoes and place them on a baking sheet lined with parchment paper. Roast the tomatoes in the oven for about fifteen minutes until you notice they’ve released most of their juice. Remove the roasted tomatoes and set aside.

The second step is to roll out some pie crust on another baking sheet that’s been lined with parchment paper. You can use your own pie crust recipe, but since we’re keeping this recipe extra simple, a pre-made crust works just fine. If using a pre-made crust, make sure it’s thawed out before continuing.

Spread goat cheese over the center of the crust and then cover with parmesan cheese. Freshly grated parmesan cheese will give you the most gourmet flavor to complement the rich tomatoes.

Layer the roasted tomatoes over the parmesan and goat cheese, and then season with salt and pepper. Add a bit more parmesan because, well, who doesn’t love more parmesan cheese?

Fold in the sides of the crust for that gorgeous, rustic French presentation that makes galettes so iconic. Then, sprinkle some everything bagel seasoning over top. This seasoning is typically a mix of poppy seeds, white and black seeds, dried garlic and onion, and salt.

Finally, whisk an egg with a tablespoon of water to brush over the crust. Bake the fresh tomato galette in the oven for 35 to 40 minutes. When it’s ready, let it rest for twenty minutes before cutting in.
